Dark Vegetables: Great for Weight Loss and Overall Health

At Be Fit Cherie, we’re dark veggie fanatics! Dark vegetables like eggplant, broccoli, and red cabbage are not only delicious, but also packed with nutrients. These vegetables are rich in vitamins, minerals, and antioxidants that can aid in weight loss, help prevent chronic diseases, and improve overall well-being.

Eggplant is a low-calorie vegetable high in fiber, potassium, and antioxidants. It’s a good source of vitamins B6 and C, which are important for maintaining healthy skin, hair, and nails. The antioxidants in eggplant can help protect against oxidative stress and inflammation, which are linked to chronic diseases like cancer and heart disease.

Broccoli is another dark vegetable that’s loaded with nutrients. It’s a great source of vitamin C, vitamin K, and folate, which are important for maintaining healthy bones, blood vessels, and immune function. Red cabbage is a cruciferous vegetable that is rich in vitamin C, vitamin K, and antioxidants. Red cabbage is also a good source of fiber.

Incorporating the dark veggies mentioned above and more into your diet can have numerous health benefits. These vegetables are low in calories,  high in nutrients, versatile, and can be prepared in a variety of ways. Here’s Cherie’s super-simple recipe for roasted broccoli:

  • Buy fresh broccoli, enough to fill a cookie sheet.

  • Drizzle on olive oil, paprika, garlic salt, and pepper.

  • Bake at 450 degrees for ~ 15 minutes. 

That’s all it takes! You can also add other veggies like eggplant chunks, cauliflower, and more. Try to eat dark vegetables every single day!
